Fig and Banana Bread200g dried figs, chopped 2 eggs, lightly beaten ½ cup brown sugar 2 tablespoons olive oil 1 teaspoon ground cinnamon 2½ cups wholemeal self-raising flour 1 cup So Good soy milk 3 ripe medium bananas, mashed 1. Combine figs, eggs, sugar, olive oil, cinnamon, flour and So Good in a large bowl and stir to combine. 2. Fold through the mashed bananas and divide the mixture evenly between two lightly greased 22 x 11cm loaf tins. 3. Bake in a moderate oven, 180oC, on the middle shelf for 50 minutes or until golden and firm. Serve warm from the oven or toasted and spread with light cream cheese, honey or jam.
